3 carrots
2 burdock roots
1 tsp light sesame oil (vata), ½ tsp sunflower oil (Kapha and Pitta)
3 TBS water
1 tsp mirin (can omit or just add a pinch of sugar if desired)
Pinch of salt
Cut carrots and burdock root into matchsticks. Heat oil in pan and sauté vegetables over medium heat until cooked but still crisp. Add water and cover. Simmer over low heat for a few minutes. Add mirin and salt and continue to simmer for another 5 minutes. I like to serve with basmati rice and freshly chopped cilantro or you can serve it with whatever grain is more appropriate for your constitution.
